Mickey Shaped Beignets At Home

Hello, happy Monday, and welcome to the Coronavirus diaries day 1! Kidding...

But seriously, who has spent the past week looking for "out of the box" fun things to do with your kiddos while you're home together for this extended period of time? Well, if you're a Disney fan who  loves the beignets over at Port Orleans French Quarter at Walt Disney World (or Cafe du Monde in New Orleans), and you own an air fryer, look no further!

As a full disclaimer, although this recipe was good and we all enjoyed these beignets, they don't taste *exactly like the ones you'd find in New Orleans or at the French Quarter resort, but they are a fun, at home substitution!

During this experiment, I tested out two recipes - one that did not include active dry yeast and one that did include active dry yeast. In the end, although the one that included the yeast took longer to prep, it was definitely the better of the two recipes. The one without yeast was incredibly sticky and too cake-like. So, moral of the story - if you're making these beignets and want a decent tasting recipe, go with the yeast!

After prepping the dough (including rising time) Brayden and I set to work on cutting out Mickey shapes!

We used an air fryer for this experiment because I've never actually deep fried anything (like, ever) and was kind of scared of burning the house down!

I will say, although I love the option of using an air fryer, these beignets weren't as light and fluffy as they would have been had we deep fried them. Don't get me wrong, they were very good, but not Cafe du Monde perfect.

Look how precious they turned out, though!

Jason and I enjoyed this little touch of our two favorite places (Disney and New Orleans) with a cup of coffee for breakfast! Brayden loved them too, and he even asked for a second serving!

Mickey Shaped Beigents (with an Air Fryer)
Adapted from: The Blue Jean Chef

Ingredients:

Yeast mixture:
3/4 cup of warm water
1/8 tsp of sugar
1/2 envelope of active dry yeast (about 1 tsp)

Dough mixture:
1/4 cup of sugar
4 cups of all purpose flour
1/2 tsp salt
2 tbsp butter - room temperature
1 egg (lightly beaten)
1/3 cup of almond milk
1/4 cup melted butter
1 cup of powdered sugar

 Directions:
  • Combine lukewarm water, 1/8 tsp of sugar, and yeast in a bowl to let proof for five minutes.  Make sure your yeast mixture makes a froth at the top before using it. If not, check the expiration date on the packaging and start again.
  • In a large bowl, combine flour, salt, butter, and sugar and combine.
  • Add the egg, milk, and yeast mixture to the bowl and stir until mixture forms into a sticky ball.
  • Knead the yeast for a few minutes (about 5 minutes or so).
  • Transfer dough to an oiled bowl and cover with plastic wrap to let it rise for at least 2 hours. You may refrigerate overnight if needed, but make sure dough is at room temperature before proceeding.
  • Once the dough has risen, roll the dough to a thickness of 1/2 inch with a rolling pin or cup. Use a Mickey cookie cutter (or any shape you like) to cut out dough.
  • Brush the beignet shapes on both sides with melted butter.
  • Air fry in batches at 350 degrees F for 8 minutes.
  • Once the fryer is finished, transfer beignets to a bowl and cover with powdered sugar.
  • Serve and enjoy!
If you prefer to deep fry these, you can! Make sure to use vegetable oil and have it at a heat of 370 degrees F. Fry until golden brown on both sides, transfer to a paper towel lined plate, sprinkle (our pour) over with powdered sugar and serve!

A faster option to making these beignets is to purchase the Cafe du Monde mix itself. Since we are in the middle of this craziness and I was trying to limit my social interactions as much as possible, I opted for making my own at home vs making a trip to the grocery store.

If you try this recipe, let me know in the comments below! I hope you enjoy as much as we did! :)

2017 Rock 'n' Roll New Orleans Half Marathon

On Sunday, I completed another Rock 'n' Roll New Orleans Half Marathon. This race is one of my favorites and I love running it year after year!

My running buddy Heather and I decided on a 5:30 a.m. wake up call so we could make it down to Lafayette Square for the Team 413 pre-race prayer.

Mr. Chris gave a great little message about being a light in a dark world followed by a prayer. I so appreciate him for offering this and the Rock 'n' Roll series for having him do so. If you're running any other Rock 'n' Roll series races this year and are interested in a little pick-me-up before the race, check out the Team 413 booth at the Expo for further information!

After walking around for a few minutes trying to find our running group friends (which returned unsuccessful), we headed to our corral!

Before I knew it, the race started and my corral was off and running!

Right before crossing the start line, Heather walked to the side to throw our water bottles away. I turned around and poof...she was gone! I'll admit, I had a little panic moment and stopped after crossing the start line to call her. By that point, the next corral was fast approaching and I had no clue what to do. Thankfully, she was literally just off to the left, also trying to call me! WHEW...crisis averted!

One of my favorite parts of this race in particular is this band right here. They are truly a New Orleans Jazz Band are always a great kick off to the race!

Before I knew it, we were at mile 4 and the turn around point. The first few miles of this race seriously flew by for me!

The sights of New Orleans are so much fun to see! This truly is a great course!

Running in front of the World War II Museum with bagpipes playing out front gave me the chills.

There were so many spectator signs and course cheerleaders out and about...I loved it!

So, my non southern friends...try to figure out how to pronounce this one! Any guesses?

It's pronounced chop-eh-two-lus. No, I'm not kidding.

Anyway, that made me laugh and I just thought I would share! :)

Around mile 8, Heather told me to go on and run on my own. I looked at my watch and noticed that I could still pull off a 2:20 if I played my cards right, so I proceed to haul it for the next 5 miles.

I hit miles 9-13 between a 9:15 and a 9:40 pace. I didn't initially come into this race with a goal in mind, but I wanted to at least get a decent corral placement time for Dopey's Challenge (if I get in).

These guys always crack me up!

I love seeing the Brooks guy because that means we are almost at the French Quarter!

Around Mile 10, we hit Jackson Square and Cafe du Monde!

Sadly, I had zero beignets this trip. Whomp whomp.

Although I was trying to keep a consistent pace, I still stopped for my usual Mile 12 picture! :)

...cause I mean, I had to.

Right around Mile 12.5, the course splits between full and half marathoners. I've run this full marathon three times and I still give a sigh of relief every time the half marathon course takes me into City Park and the finish line.

I crossed the finish line of my 26th half marathon with a time just a little over my goal at 2:21 and some change.

The finishers chute was full of food and hydration although I somehow missed the bottles of water?

After walking around for a few minutes to recover, I found a nice shaded tree and sat down to wait on Heather.

Post-race goodies!

After a few minutes, I received a text from Heather, so I walked back over to the end of the finishers area to find her. While standing there, I heard my name! It was a fellow Louisiana friend of mine, Deloris!

It was so much fun running in to her again! The first time I met her was at Walk Ons at a previous Rock n Roll New Orleans race, so it was great to see her here again!

Heather and I walked around the finishers area for a while, enjoying the sights and sounds of the post-race celebration.

Look at all the food trucks!

We also took our obligatory post-race photo together!

Bling bling!

After photos, we made our way to the bus stop. We had a 1 p.m. check out and wanted to take our time getting ready. This race starts and finishes in two different areas, so runners are bussed back to the downtown New Orleans area from City Park.

Will I be back? Absolutely! This is a race I love to run year after year!

Thanks for following along in my journey! It's been a fun one for sure!

Mandeville Weekend in Pictures

Hi there and happy Monday! I spent the weekend in Mandeville, Louisiana for a race weekend and had a blast! Here's some pictures and tidbits of our weekend!

Off we go on our latest adventure!

Our first stop was for a potty break along the Atchafalaya Basin (pregnancy bladder). If you're ever in the area, this is the coolest visitors center/rest stop I've ever seen!

There's even a little movie you can watch, depicting life in Louisiana!

Free Community coffee, too!

Of course, the Baton Rouge bridge was full of traffic...and of course, they were playing the Florida Gators this past weekend (as usual).

As tradition, Heather had to gator chomp everyone. The first time she did this (several years ago), I died. now I think it's hilarious!

Packet pickup was held at Varsity Sports in downtown Mandeville. This is seriously the cutest little town and I love to visit!

If you couldn't tell from the bridge/gator chomp picture, Heather is NOT an LSU fan.  Sooo, when I saw the official race shirts for this race (they were purple and gold with a tiger on the front), I laughed so hard I almost cried.

In fact, I was laughing so hard, I almost missed seeing Fred!

It was great to catch up and talk to him again!

He also took our picture with our bibs! I truly meant to put K-Ren on my bib, but I somehow messed up and put my twitter username. Definitely didn't mean that! Haha oh well...whoops!

After packet pickup, we walked over to LaLou (the former Broken Egg Cafe) and enjoyed a yummy breakfast!

Same owners, new restaurant name, similar menu. I noticed a few things that weren't on the menu anymore, but it all still looked and sounded pretty good!

We also noticed a downtown festival that looked intriguing, so we walked through to check it all out! We didn't buy anything, but we enjoyed browsing the various booths!

Our after lunch treat included a stop at PJ's. We tried to find a snowball stand but the one I've been to was closed. PJ's is right next door which is the second best thing, so that's where we went! This sign with the kids cracks me up!!

Apart from a velvet ice, I also ordered a cake ball to go and a slice of banana nut bread for a post race treat!

Our next stop was the hotel to check in and relax before dinner. I laid out all of my race clothing/items, making sure I had everything I needed!

The above is how I prepare before a race...

...and this is how Heather prepares for a race! We got a good laugh out of that one, too!

For dinner, we decided on Cracker Barrell (partly because I had to have another look at their Christmas collection)!

I behaved myself and didn't buy anything this time! :)

Chicken and dumplins for dinner!

We also shopped around Academy and World Market before calling it a night! We had an early wake up call the next morning!

After the race (more on that tomorrow), we showered and took our time getting ready because we had a late check out...so incredibly nice!

Lunch was at the Times Grill for a yummy cheeseburger!

We also stopped a friends parent's house to pick up some maternity clothing she's sharing with me! I am so appreciative...thanks, Heather!

On our way out of town, we stopped at Cafe du Monde in Mandeville for a little take-home treat!

Their iced cafe au lait is incredible. I'm glad we don't have one of these closer to home! I would be in trouble!!

Jason and I shared the order of beignets at home after dinner! :)

They put the powdered sugar in a separate to-go back so we were able to enjoy them later!

I also couldn't let the weekend go by without a picture of this girl in her purple and gold tigers themed race shirt!! Muahaha!

Overall, we had a ton of fun and really enjoyed ourselves! The weekend was filled with lots of fun times and experiences! Looking forward to the next time!! :)
