Tofu and a Movie!

So far this week:

Monday – 2.5 mile run and 45 second #plankaday (my dogs were distracting me….)
Tuesday – 3 mile run and 1 minute #plankaday
Today – Rest day!

I woke up early on Monday and Tuesday and ran prior to going into work! I love having my workouts complete before the day begins!

Last night, I attempted to bake something I tried only once before in the past and that attempt was met with disaster.

Tofu.

I saw a recipe on my favorite Vegan website, Oh She Glows and I decided to have another “go” with Tofu!

I used Extra Firm Tofu this time instead of silken (learned my lesson – silken tofu is very hard to work with in my experience!)

I didn’t crumble the wheat bread enough, but they still turned out great!

I also had a left over zucchini from my friend’s garden and potatoes from Jason’s grandmother’s garden, so I made a side of Hearty Zucchini Soup from Health Magazine!

Delicious! A new favorite in my book! Someone asked, “What is that sauce??”

It’s Ketchup.

The Tofu sticks reminded me of fish sticks from my childhood. There’s no way I could eat fish sticks now, but these tofu sticks brought  back a warm little memory and made me smile! :0) The perfect pair? Ketchup! Right….

After dinner, I took my cousins who are visiting from out of town to the movie!

We went to see Brave which was really cute but not at all what I was expecting!

….we also had FroYo after the movie!  Perfect ending to a great day!

Mezamashii Run Project

Mezamashii: Brilliant. Eye Opening.

“Mezamashii is the Japanese word for eye-opening, or brilliant. The Mezamashii Run Project is Mizuno’s quest to deliver a more brilliant running experience to dedicated runners everywhere.”

Just a few weeks ago, I received an email inviting me to participate in Mizuno’s Mezamashii Run Project. I knew a little bit about this project prior to receiving the email because I read about it on several other blogs - however, I never dreamed that I would be chosen!

Up until that point, only about 280 others were a part of the project….

As of today, there are over 5,000!

Looks like this idea spread like wildfire! I love it!

After reviewing the email and scouring the Mezamashii website, I chose the Mizuno Wave Nirvana 8’s.

In the past, I tried Mizuno’s but decided they weren’t for me, so I was skeptical about running in these. I called to speak with a fit specialist on the phone regarding my current running shoes and they assisted me in finding the right fit. I placed an order and just days later, the shoes arrived!

Since receiving these shoes, I haven’t run in anything else! The fit is great, the shape is perfect for my foot, the shoes are lightweight, and I have had ZERO knee pain while running in them! I’ve had my Mizuno’s for about a month now and since that time, I’ve had numerous Brilliant runs. I LOVE these shoes and I’m SO grateful that I received the opportunity to participate in the Mezamashii Project!
