Running & Popsicles

Hi there! Happy Monday! I hope your Monday is off to a great start, I know mine is!

It’s officially race week for the Gleaux Run 5K and preparations are happening all over the place! For starters, we have over 460 registered runners. Shirts have been ordered, winner prizes are being shipped, and volunteers are agreeing to help all over the place (thank goodness for volunteers)!

Heather and I ran on Saturday morning (we made it through 9.25 miles) and we mapped out the route for the Gleaux Run.

After our run, we walked through our area’s farmers market because Heather knew of a guy who was selling gourmet popsicles. These popsicles are all made with fresh ingredients, whole fruit, coconut milk, tea, etc…

Most of the popsicles names are based off of 80’s song titles. :)

I went with the chicory and ivory because it was early and cold coffee sounded fabulous at that moment. Next time, I’m looking forward to trying a fruit popsicle!

The remainder of my weekend was spent sleeping (I might have taken a 3 hour nap on Saturday, the heat absolutely DRAINED me) and planning for the Gleaux Run!

These letters will all be spray painted with glow in the dark paint. I was able to cut all of this out with my Silhouette machine. Isn’t it wonderful?! I’m in love!!

Last but not least, we made spaghetti this weekend and I ate it over zucchini noodles (fresh zucchini sliced in a vegetable slicer). It was delicious!

  1. I love zucchini noodles! I recently got a zucchini noodle slicer and have been enjoying tasting the noodles with lots of different spices!

    I can't wait to hear about how the Gleaux run goes this weekend. So excited for you!

  3. I've never tried zucchini noodles! Spaghetti is one meal I haven't had since I've been dieting...I miss it! I'm sure zuchinni noodles would make it a lot less calories! Yummy popsicles! What a nice treat after a long run!

    1. Yes, you could eat with zucchini noodles or spaghetti squash and that would cut down on the carbs/calories significantly!
