Recipe: Peppermint Bark

Have you found “that” perfect Christmas recipe, the one that leaves you daydreaming about Christmas all year long?

A few years ago, I discovered two recipes, one for Peppermint Bark and the other for something called “Reindeer Food”. Today, I’m here to share my recipe for delicious, melt in your mouth, taste of the holiday, Peppermint Bark.

Peppermint Bark 1

Peppermint Bark

Ingredients:

24 oz Almond Bark (you’ll use 9 of the 12 squares)
24 oz Chocolate Bark (you’ll use 6 of the 12 squares)
1 tsp Peppermint Extract
1 package of candy canes

Directions:

Line a cookie sheet with parchment or wax paper.

Melt chocolate bark in the microwave until smooth. I use the microwave 30 seconds at a time, stirring thoroughly after each 30 second interval. Be careful – do not over heat or burn.

Once chocolate bark is melted, smooth chocolate onto the parchment/wax paper over cookie sheet.

Freeze chocolate bark until solid.

While chocolate bark is cooling, crush candy canes into small pieces/chunks. (You’ll want a variety of sizes.)

Melt Almond Bark in microwave, similar to above step with chocolate bark. Once Almond Bark is smooth, stir in 1 tsp of peppermint extract, followed by a handful of candy cane pieces.

Smooth Almond Bark mixture over the chocolate bark. Sprinkle remaining candy cane pieces over almond bark.

Place in freezer for hardening.

After 1 hour, remove mixture from freezer and allow to return to room temperature.

Break peppermint bark into chunks (this must be at room temperature – otherwise, almond bark will break away from chocolate bark).

Serve and enjoy!

Merry Christmas! :0)
